EGG MUFFINS

Who doesn't love breakfast for dinner? After failing to make Andrew breakfast on Sunday, I thought I would just make it for dinner last night instead. I got the recipe from the blog Closet Cooking (I think I need to be friends with this guy!) Without further adieu....


Ingredients:
1 cup cottage cheese
4 eggs (lightly beaten)
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup ham (chopped)
1/2 cup cheddar cheese (grated)
2 green onions (sliced)

Directions:
1. Mix the cottage cheese, eggs, flour, baking powder and salt in a bowl. - Ok, anything with cottage cheese in the mix wins in my book. Instead of using four whole eggs, I used six egg white and one whole egg. (Two egg whites = one whole egg)



Photo is pre-flour and post-cottage cheese.


2. Stir in the ham, cheddar cheese and green onions. - This is getting good!






3. Rub some butter (I used vegetable oil spray, same difference!) in the baking dish to prevent sticking.  - He used part muffin tin/part bread pan. I used giant muffin tins!



4. Bake in a preheated 400F oven until they are golden brown on top and a toothpick poked into the center comes out clean, about 25-30 minutes. - Yup, that's about right.



I caught up on some Wheel of Fortune while this baby was in the oven. I can't believe I couldn't figure out the prize puzzle... another fail!

  2. breakfast for dinner is my FAVORITE!!! I like making spinach and feta omelettes, but this looks WAY better!!
